Dopo la fermentazione, il vino riposa per ben 24 mesi nelle stesse vasche di cemento. Questo lungo affinamento contribuisce a conferire al Cirò Rosso Classico Superiore una notevole eleganza e una persistente espressione aromatica, rendendolo ideale per accompagnare piatti ricchi e strutturati, tipici della cucina calabrese e mediterranea.

Igiea by Tenuta Grillo is a wine with character and personality made from red grapes. During the harvest, the selection of the grapes is obsessive, while in the cellar the fermentation is spontaneous with very long macerations of 40-60 days on the skins, in order to extract all the tannin necessary for aging. Refine 30 months in large barrels, then long rest in the bottle, without filtration or clarification.

The Gewurztraminer Grand Cru Eichenberg by Pierre Frick is a wine whose grapes come from the Eichberg vineyard which is facing south-east at an altitude between 220 and 340 m. The soil is essentially made up of calcareous conglomerates and Oligocene marls. This vineyard, at the foot of the three castles, is sheltered by the slopes of the Vosges and enjoys a particularly dry and warm microclimate, as rainfall is the lowest known in the Colmar region.

Sudigiri by Villa Job is a sauvignon-based white wine. The management of the soil and selected harvests allow the Villa Job sauvignon to express all its elegance. Fermentation occurs spontaneously, with the use of indigenous yeasts only and with maceration on the skins for 3 days in open barrels. Refines for 6 months in concrete and 3 months in used barriques. A wine that expresses itself on the nose with aromas of elderberry and nettle, fruity and slightly aromatic aromas. In the mouth it is medium-bodied, elegant, drinkable and with a good final persistence.

Salicornio is a white wine macerated on the skins produced with the Muscadel variety from Casa Balaguer-Vinessens. SM di La Sorga is a fresh and fruity white wine that comes from Marsanne and Sauvignon grapes, which come from old vineyards located on Villafranchiani soils in the municipality of Pézenas (Vallée de L'Hérault).
