Helena is a sparkling wine refermented in the bottle obtained from a blend of Pinot Noir, Pinot Gris, and Sankt Laurent grapes. It is produced by Dlúhé Grefty, a Czech company led by Jaroslav Tesařík who together with his family grow about 1.5 hectares of vineyards in Mutěnice and produce around 5,000 bottles of wine every year. Helena is a real bomb, fresh and fragrant, it is advisable to be careful when it is opened. An excellent wine for the whole meal, to drink at least 10 glasses, no 100..but maybe even 1000!

Nase is Milan Nestarec's new pet nat. Naše, a Czech word meaning ours, is a wine that Milan wanted to pay homage to its people and its land. The grapes that make it up are a blend of Riesling, Welschriesling, Neuburger, Gruner Veltliner, Pinot Blanc. Spontaneous fermentation in steel for 2 months. Then it is bottled. Spontaneous refermentation in the bottle in spring with the arrival of the first heat. Unfiltered wine, without added sulphites.

István Bencze's Petillant Rosè is a sparkling wine that comes from a blend of red and white grapes harvested on different dates, and vinified according to different techniques (direct pressing/whole bunch, stainless steel and amphora). A wine that comes from the heart of Hungary, obtained from the homonymous white grape variety originating from Hungary. Vines that grow on a wonderful volcanic soil capable of imparting minerality to wines. Harvest that begins at the beginning of September and takes place in several stages to reach perfect ripeness. After a slow and soft whole cluster pressing, the grapes are transferred to clay amphorae where they ferment and mature for 9 months. It was bottled in mid-July unrefined, unfiltered and without the addition of SO2. A wine that at the anso gives aromas of field notes, aromatic herbs, and citrus peel. The sip is guided by a fresh and vibrant minerality.

Danger 380 Volts is a sparkling white wine obtained with the method of refermentation in the bottle based on a blend of Muller Thurgau, Neuburger and Muscat. Forks'n'Knives Red is a red wine based on Pinto Nero that comes from Moravia, Refines for a few months in used wooden barrels. Fruity hints of cherry and raspberry are perceived on the nose, followed by aromas of jasmine, earthy notes and a hint of chalk. On the palate it is warm, medium-bodied, balanced, soft, with excellent freshness.

István Bencze's Aries Riesling is a fascinating wine with extreme tension and depth. To produce it, the oldest vines that reach 45 years of age are used. After a soft pressing of the whole bunch, it is placed directly in 750L amphorae where it ages for 18 months. It was bottled unfiltered, unclarified and without added sulphur. A wine that can age as long as you resist not opening it.
