V For Vittorio is the wine that Ennio and Mena wanted to dedicate to their son Vittorio. Made from white grapes. The hand-picked harvest is painstaking, only the perfect bunches enter the cellar. Fermentation is spontaneous, entrusted only to the yeasts present on the peel. Maceration on the skins in an open vat for 8 days. Then the refinement continues for 10 months in steel tanks. It is not filtered or clarified and no sulphites are added before bottling. V For Vittorio has a golden yellow color. On the nose hints of yellow fruits emerge, with notes of exotic fruit. On the palate it is fresh, well-structured and well balanced. The finish is long and persistent.

"Funky" evokes the winery's experimental approach to the winemaking of this ancient Lazio grape variety. Manual harvesting in small crates is followed by vinification using two distinct methods: half the grapes are pressed directly, and the other half macerate on the skins for 24 hours before pressing. The wine matures for eight months in stainless steel. Bottling follows, followed by eight months of bottle aging before release.
