The Cremant d'Alsace de Raphael by Les Vins Pirouettes is a fresh, agile and crunchy sparkling wine based on a blend of Pinot Blanc, Auxerrois, Riesling, Pinot Grigio. Like a bite of an apple surrounded by white flowers, bread crust and minerality. Tense and thirst-quenching sip, but of great elegance.

The Chat Fou is a fresh and juicy wine that comes from a blend of Grenache, Cinsault, Carignan red grapes with a small percentage of a white berry variety, Cinsault. It has a ruby red color. On the nose, aromas of currant jelly, raspberry, with a slightly spicy touch. On the palate it is complex, elegant and surprisingly long.

Ripetente di Collecapretta is a white wine with excellent minerality and good body, obtained from Trebbiano Spoletino grapes. Due to a fermentation block in the 2021 vintage, it was produced with the ripasso technique, using the skins of the same type of grape as the 2022 vintage. It refines in steel for a few months.

Molitor's Riesling Alte Reben Trocken is a white wine obtained from pure Riesling grapes. This is the oldest vintage available. The scent is buttery and tropical, leeches and passion fruit on chalk and burnt rubber. In the glass it evolves into a disarming complexity, surprising freshness on the palate. Peach and lemon on the nose, flint. Burnt rubber now looks like oil. Long and austere, fresh and drinkable. A great emotion.

Buscaia di Collecapretta is a white wine made from Malvasia Bianca grapes with a tight bunch and Malvasia di Candia. From the yellow color tending to golden with delicate and varietal aromas of flowers, lavender and hawthorn, in which the minerality of the soil and brackish and clay tones in the sun stands out. Delicate, fresh in the mouth supported by a nice flavor.

Lezer is a classic fresh and carefree "snack wine" obtained from Teroldego grapes and an assembly of 10 vinification tests in amphora, wood, steel and cement. Campo di Colonnello by Raina is a white wine macerated on the skins for 4 days and aged on its fine lees in vitrified cement tanks for 5 months. It is bottled without filtration or clarification. The nose perceives aromas of ripe fruit, floral, and notes of officinal herbs. The sip is of excellent freshness, with sapid and mineral sensations, and a finish of beautiful persistence where the notes of exotic fruit return pleasant.

The Orange is a white wine macerated on the skins for about 15 days obtained from Zibibbo grapes. It is a deep yellow color tending to orange. The taste is warm, fresh, with splendid sapidity and an elegant and very long finish.

Vigna Vecchia di Collecapretta is a white wine made from old Trebbiano Spoletino vines which ages in cement tanks. Golden yellow in color, with a unique, slow and neutral character in youth, it is refined acquiring mineral notes of great purity and a strong reference to the viscerality of the territory. In the mouth it is acidic and salty.

The Grechetto di Raina is a white wine obtained from the grapes of the same name that come from vineyards located at 22 m.s.l.m trained in guyot. Spontaneous fermentation with a 3-day maceration on the skins. It then ages for 3 months in steel tanks on its fine lees and 5 months in the bottle. The nose has fruity and floral aromas followed by aronatic notes. On the palate it is fresh, juicy and fruity with good minerality and slightly tannic.

Semplicemente Vino Bianco by Cascina degli Ulivi is an agile and fruity wine produced with white grapes from vineyards that rest on red and clayey soils. The alcoholic fermentation is spontaneous in acacia wood barrels and the aging on the fine lees is 3 months in the same containers. Naturally clarified, it undergoes a light filtration before bottling. No addition of sulfur dioxide during all stages of production.
