Sparkling wine made from Pinot Noir grapes in purity. The grapes are harvested when fully ripe almost overripe, with manual harvesting, and left for a few hours in maceration during the pressing. The first fermentation takes place in steel tanks: fermentation that stops with i cold first. The arrival of spring favors the reawakening of yeasts that transform into alcohol last residual sugars, so part, of course, a second fermentation in the bottle. The disgorgement is done manually, after 18/24 months of permanence on the lees, and the bottles they are filled with the same wine without adding anything. The Ancestral Pinot Nero Rosè is a color of cerasuolo, with abundant froth, and a continuous and subtle perlage. On the nose the aromas are persistent, captivating, with intense notes of fruit. The taste is soft and harmonious, with a fragrant note of right acidity. A particular, unusual sparkling wine that pleasantly amazes with his marked personality.

Castello di Stefanago is located in Borgo Priolo, in the province of Pavia, in one of the most suitable areas of Oltrepò Pavese for the cultivation of vines. Castello di Stefanago is owned by the Baruffaldi family who have been making wine for five generations.
