Happy Selvaggio Ancestrale - VentiVenti - S. A. Il Borghetto di Razzaboni
VentiVenti's Happy Selvaggio Ancestrale is a fascinating sparkling rosé wine, made exclusively with 100% local red grapes. Its production is distinguished by a very low sulphite content and the absence of added sugars, making it an intriguing choice for those looking for a different tasting experience, without sacrificing the cleanliness and freshness of the wine. On the nose, hints of red fruit, yeasts and flowers are perceived, while on tasting the entry is characterized by an acidic and fresh note, which develops into a finish with a marked flavor. The juicy and fruity notes of the grapes complete a balanced and lively taste profile. To fully appreciate it, we recommend shaking the bottle lightly before use, to best release the aromas and bubbles. This project was born in collaboration with AstronaveLab, an association that brings together young people with disabilities, actively involving them in all the production phases of this label, from the harvest to the bottling, up to the creation of the 12 labels represented. An initiative that combines passion, inclusion and creativity, giving life to a unique and significant wine.
Service
It is recommended to serve at a temperature of 6/8°.
Pairing
In harmony with the dishes of traditional Emilian cuisine, great as an aperitif, to try with a plate of fried dumplings with salami.
Cellar: VentiVenti - S. A. Il Borghetto di Razzaboni
The Ventiventi winery is located in Medolla, in the province of Modena, and was born from the enthusiasm and desire of a family to create an innovative and different reality in the wine district north of Modena. With a strong spirit of imagination, practicality and tenacity, they gave shape to this dream, calling the winery Ventiventi in reference to the year 2020, which marks the conclusion of the works and the official start of their activity. The company was designed and built following a modern approach, with the aim of obtaining high-quality wines while respecting the plants and the surrounding territory as much as possible. Attention to order and precision is fundamental to their production philosophy. Ventiventi stands out for its respect for nature: it avoids the use of traditional chemicals, significantly reducing the use of copper and sulfur thanks to the use of advanced technologies. The harvest is managed with a latest-generation grape harvester, which allows the grapes to be collected in the best possible conditions, preserving the quality and naturalness of the product. For Ventiventi, modernity translates into rationality and common sense, without ever losing sight of the values of winemaking tradition, thus creating authentic wines that respect the territory.
