Franciacorta Brut Solouva - Solouva
Franciacorta Brut Solouva is produced with a new production technique where in no phase, neither for the second fermentation nor for the liquor de expedition, are added sugars. The grapes are harvested when they reach full maturity, the wine is bottled when the first fermentation has not yet finished and therefore there are still fermentable sugars, while previously frozen must is used for the dosage. Spent on the lees for 30 months against disgorgement. Straw yellow color with fine perlage. The nose recognizes fruity aromas with mineral notes and hints of broom. The mouth is enveloping, it attacks with a glycerine sensation that is immediately balanced by a beautiful acid note. Closes dry with just 2 gr / liter of dosage.
Service
We taste the Franciacorta Brut Solouva at a temperature of 6/8 ° in flute ballon. Franciacorta to drink immediately.
Pairings
Franciacorta excellent as an aperitif, it goes well with delicate fish dishes, to try with a baked sea bass.

Farm Solouva is a young company from Franciacorta which is part of the TerraUomoCielo project. The project was born in 2002 from the meeting between Giovanni Arcari, sales agent, and Nico Danesi, oenologist of the Camossi company, with the producer Andrea Arici from Colline della Stella, with the aim of creating wines that reflect the philosophy of the people involved, wines with a precise identity and character. Solouva is led by the young and promising Andrea Rudelli, who cultivates one and a half hectares of property, planted only in chardonnay. Andrea does not resort to external sugars for the production of his Franciacorta, but only to those of the grape, at every stage of processing. Hence the name of the company: Solouva. Andrea's philosophy consists in collecting the bunches when fully ripe, thus exploiting the sugars of the grapes both for the first fermentation and for the second fermentation (exploiting the sugars that remain blocking the first fermentation before it is finished). The final dosage is also carried out using only must. Solouva exists in two versions: Brut and Zero dosage. Franciacorta which express the identity and expression of the territory
