David Léclapart is a leading figure in the panorama of top-level récoltants-manipulants and a champion of biodynamics in Champagne. Since 1997, he has passionately led the small family domaine of Trépail, a Premier cru area of ​​the Grande Montagne de Reims, imposing a strong vision: to immediately convert all the vineyards to biodynamic agriculture. The vineyard, of about 3 hectares divided into 22 micro-plots all in Trépail, is distinguished by its rigorous and environmentally friendly management: no use of chemicals, grassed vines and worked under the rows, to preserve the health of the soil and the spontaneous character of the grapes. The terroir of this area, characterized by chalky soil with a thin layer of clay-limestone soil, offers ideal conditions for Chardonnay, which is the predominant variety, and Pinot Noir, both from high-quality massal selections. Over time, the family team has been enriched with the entry of the son Martin and his brother Léo, creating a real team dedicated to the production of authentic and natural wines.In the cellar, biodynamic practices are strictly adhered to: no oenological additives, no spontaneous fermentations, no filtration or clarification, and no tartaric precipitation. Léclapart bottles are the fruit of single vintages, often single-varietal or from a single vineyard (“l’Apôtre”), and are often produced without dosage, thus preserving the purity and natural character of the grapes. Vinification can take place in tanks, in barriques or both, and aging on the lees varies between 2 and 4 years. In particularly difficult or poor vintages, a blended cuvée called “l’Aphrodisiaque” is produced. In addition to champagnes, David Léclapart also dedicates himself to still wines, producing, in the most deserving vintages, a red Coteaux-champenois 100% Pinot Noir, and later also a white and a rosé, thus expanding the expression of the terroirs and the biodynamic philosophy of the domaine. In short, Léclapart represents a point of reference in the world of natural Champagne wines, with an approach that combines respect for the terroir, family tradition and sustainable innovation.
