Castello di Stefanago's Spumante Metodo Classico Brut Blanc de Blancs "Ancestrale" is a sparkling wine obtained from a blend of local white grapes. The grapes are harvested at full ripeness almost overripe, with manual harvesting, and left for a few hours to macerate during the pressing. The first fermentation takes place in steel tanks: fermentation that stops with the first colds. The arrival of spring favors the awakening of the yeasts that transform the last sugar residues into alcohol, thus a second fermentation in the bottle naturally begins. The disgorgement is done manually, after 18/24 months of permanence on the lees, and the bottles are filled with the same wine without adding anything.

The recommended serving temperature is 10/12 °°. Wine to be drunk immediately in flute glasses, but it is very long-lived and evolves with the passage of time.

Castello di Stefanago is located in Borgo Priolo, in the province of Pavia, in one of the most suitable areas of Oltrepò Pavese for the cultivation of vines. Castello di Stefanago is owned by the Baruffaldi family who have been making wine for five generations. Today the wines are born of commitment, passion and constant research to innovate the tradition of the brothers Antonio and Giacomo, while the commercial sector is followed by his sister Antonietta. The hectares of vineyards are 20 hectares cultivated in organic farming. All the vineyards, are between 300 and 470 m.s.l.m., and are interspersed to enhance the biodiversity of the land.
