Service
We recommend tasting it at a temperature of 8/10 ° in tulip glass. Wine is to be drunk immediately but will express its best in a few years. It is advisable to keep it in a horizontal position in a cool, damp and dark cellar.
Pairing
The Conasbrancas goes perfectly with the main courses of fish, to try with fillets of sea bream stew with tomatoes and olives.
Winery: Pequena Adega Romana
The Galician dream of Francesco Testa, an Italian artist, singer-songwriter and winemaker, takes shape with Pequena Adega Romana, a small Roman winery in Galicia. Choosing the region of Galicia, in the far north-west of Spain, Francesco retraces the footsteps of the ancient Romans, who landed on its shores, in a journey that represents both a return to origins and a new beginning. Two of his wines are aged in traditional “tinajas”, ancient amphorae made by the craftsman Padilla following centuries-old techniques. The vineyard and the winery follow a path of “nothing added, nothing taken away”: an approach that limits treatments on the plant to a minimum and lets the grape juice transform spontaneously, in the most natural way possible. For the first year, Francesco has vinified at La Perdida, where he has found a home while waiting to officially inaugurate his own winery with the 2021 vintage. This choice reflects his philosophy of respect for nature and tradition, and the desire to create authentic wines that tell the story of the territory and its origins.
