San Rocco Riesling - Castello di Stefanago
Obtained from pure Riesling Renano grapes that come from the San Rocco vineyard facing west, 400 meters above sea level, on a composite ground and dissolved with clay, sand, tuff and salt residues The harvest is manual with selection of the bunches. In the cellar the grapes are crushed by soft pressing, and fermentation is spontaneous in steel tanks. After maturation in the tank, the aging takes place in large 15-hectolitre barrels of acacia wood for 12 months. Further refinement in bottle for at least one year to evolve the typical varietal component of Riesling Renano. The San Rocco is straw-yellow in color, bright and bright. The nose is fine, broad, and elegant with references to fruit and flowers. The taste is of character, sapid, balanced, rich in strength, with a nice freshness and persistence.
Service
The recommended service temperature is 16 °. Wine to be drunk immediately in tulip glasses but it is very long-lived, it evolves with the passing of time, and the fruity and floral notes fade in favor of a greater typical minerality of the vine.
Pairing
Excellent as an aperitif, perfect with hors d'oeuvres, with fish dishes, with seafood and with crustaceans. Particularly suitable to accompany goat's cheese.
