Vino Spumante di Qualità Metodo Classico Brut Nature 48 - Castello di Stefanago
Castello di Stefanago's Spumante Metodo Classico Brut Nature 48 is produced with 100% Pinot Noir grapes. Organic cultivation, manual harvest in boxes with selection of the bunches. The grapes are harvested when fully ripe, taking great care so that the grape does not break, and immediately vinified with soft pressing, avoiding contact with the skins. Fermentation stops with the arrival of the first cold, but the arrival of spring favors the awakening of the yeasts which slowly complete the transformation of sugars into alcohol. Thus begins the second fermentation in the bottle. Two or more years pass before topping up the bottles with the same wine without adding anything. Very particular sparkling wine with golden yellow reflections, simple and intuitive that evokes the scent and flavor of ripe fruit with fragrant notes of pastry and aromatic herbs. Abundant foam, continuous, subtle, discreet, creamy perlage, with a soft and balanced taste with a gentle acidity. Ideal as an aperitif, suitable for the whole meal.
