Unodinoi - Tenuta Macchiarola
Unodinoi is a red wine that comes from Primitivo grapes. The grapes come from vineyards grown organically that grow on calcareous-clay soils. After harvesting, it is de-stemmed and crushed, and fermented in stainless steel tanks with maceration on the skins for 15 days. Refine for 18 months on fine lees with continuous batonnage and decanting. The whole process of vinification takes place without its sulfur dioxide, and the first of bottling does not undergo clarification or filtration. Unodinoi has a ruby red color. On the nose there are aromas of red fruit, with menthol notes and herbaceous hints of Mediterranean scrub. In the mouth it is soft and full-bodied, with a nice freshness, with a delicate tannin, and with a finish reminiscent of small red fruits and licorice.
Service
We taste it at a temperature around 16/18 ° C. It is recommended to serve it in tulip glasses. Wine to be drunk immediately but left a few years in the cellar can express its great potential.
Pairings
Excellent with appetizers of cold cuts, pasta with meat sauce, meat dishes, to try with pork chops cooked in the sauce.
Cellar: Tenuta Macchiarola
Tenuta Macchiarola is a craft company located in Lizzano, in the province of Taranto. Born in the mid-80s, and at the beginning, he devoted himself to the cultivation of cereals, vegetables, vines, and breeding of animals. The turnaround of the company arrives in 2005, when Domenico Mangione, the current owner, and his father-in-law Franco De Vita, plant 6 hectares of Primitivo. When in 2007 Domenico took over the reins of the company decides to make his wine in a natural way. The first wine he produces, he vinifies it in "amaroneggiante" style, and because of his lack of experience, to free it from the dregs he has to pour it many times. Bottled without filtration, the wine "puts a piece" and becomes drinkable. This fact makes Domenico aware that nature always tries to forgive you, and many times it does things you can not understand or control, if you're good you can only support them. In 2010 the vinification with Primitivo is added to the Negroamaro, and from 2014 white grapes are also vinified, Verdeca and Fiano. All the grapes used come from vineyards grown without the use of chemistry, and in the winery they are treated with respect, looking it expresses the vine, without the use of selected, clarifying and stabilizing yeasts. Pure wines, genuine and very drinkable.
