The Pinot Noir La Boudeuse by Les Terres Bariolées is made with grapes that come from a small vineyard located on schistose, marly and limestone soils. The vinification takes place with whole bunches for 15 days in stainless steel, with maturation in barrique for 8 months and subsequent decanting to make the mass in stainless steel for a month. Very low alcohol content and no added sulphites.

The Pinot Noir La Boudeuse from Les Terres Bariolées is an interesting wine, coming from a small vineyard located in a terroir rich in geological varieties, including shale, marl and limestone. These soils give the wine complexity and character, influencing the aromatic profile of the grapes. Whole bunch vinification for 15 days in stainless steel suggests a delicate approach, which aims to preserve the fresh and fruity notes of Pinot Noir, avoiding excessive extractions that could make the wine heavy. The maturation in barrique for 8 months instead allows for the development of further nuances, such as hints of vanilla, spices and toasting, without however overwhelming the original profile of the grape, thanks to the reduced sulphite content. The final decanting into stainless steel for the assembly phase helps maintain freshness and liveliness in the wine, balancing the characteristics obtained from maturation in wood. The alcohol content makes this Pinot Noir accessible and easy to drink, ideal for accompanying light dishes or even to be enjoyed on its own. The choice not to add sulphites highlights a natural and respectful approach to the raw material, which can be particularly appreciated by those looking for authentic and less interventionist wines.

Service

We recommend tasting it at a temperature of 16/18° in tulip goblets. Wine to drink immediately but if left a few years in the cellar can give great emotions.

Pairing

Throughout the meal, it goes well with rich meat dishes. Excellent with a mixed grill.

This terroir, characterized by a splendid eastern exposure, offers unique conditions for viticulture, favoring the quality of the grapes.
