Malvasia dello Scarparo - Collecapretta
The Malvasia dello Scarparo di Collecapretta is a complex white wine obtained from the homonymous grapes coming from an old vineyard owned some time ago by Scarparo di Terzo la Pieve. The vineyard is located at an altitude of about 500 meters on soils that are a mixture of clay rich in calcium and iron with tufa and travertine limestone outcrops. Natural fermentation takes place in open-air cement containers without temperature control and with a 3-day maceration on the skins. Aging for several months in cement tanks before bottling in sync with the waning lunar cycle. There is no sulfur added at any point in the winemaking process.
