Ripa di Sopravento is a sparkling wine obtained from white grapes with the method of spontaneous refermentation in the bottle, as per the centuries-old tradition in Emilia and beyond. The nose is aromatic, with notes of fruit, hints of cream and coconut. In the mouth it is structured, with nice carbonic, very mineral, very tasty and fresh that invites to drink, nice finish.

Service
It is advisable to taste it at a temperature of 6/8 °. Daily wine but it holds a good few years of aging.
Pairings
Great with fish-based starters, zacchinis and shrimp lasagna, to try with the paccheri at the rock.
Cellar: Vittorio Graziano
The cellar of Vittorio Graziano is located in Castelvetro di Modena, a splendid village of the Modena hills. Its vineyards are 200 m. on sandy, clay and gravel soils, and are reared with varieties typical of the area, of which Graziano does not know the name, but having found them in the place then played them by mass selection. Graziano is a true, authentic vintner, who is the bearer of a long-lived farming practice that consists of bottling reforestation. All of its wines are bottled in the cold months, when the fermentation stops naturally, and the wine still remains in the wine.
