Chablis Premier Cru Les VauDeVey - Julien Brocard
Chablis Premier Cru Les VauDeVey by Julien Brocard is a white wine made from 100% Chardonnay grapes. The grapes come from the vineyard that extends on the left bank of the Serein river, cultivated on calcareous-clayey soils, with the presence of Kimmeridge (limestone stones rich in fossils). The refinement lasted 18 months in used wooden containers. A wine that underlines the great maturity of the fruit with a great volume and notes marked by hints of ripe grapes. The taste is intense and harmonious, full-bodied, with an enveloping mineral freshness.
Service
We taste it at a temperature of 8/10 ° in a tulip glass. Wine to be drunk immediately but will express its best in a few years.
Pairings
Excellent to combine with seafood, second courses with vegetables, to try with baked salmon with vegetables.
Cellar: Julien Brocard
Julien Brocard's domaine is located in Préhy, a few kilometers from the city of Chablis, in northern Burgundy. The Domaine was born when Jean-Marc Brocard, Julien's father, planted the first vines. In 1995 Julien took over and took over the responsibilities of the family business. In 1997 they decided to create ecological niches by replanting fruit trees typical of the region such as hazelnut, pear and vine peach, which help biodiversity and the balance between animals and plants. The viticultural approach is the envy of many companies in the area, one of the most difficult across the Alps in terms of climate. No chemical herbicides or insecticides for over twenty years, tilled soil and targeted and minimal treatments. From this intimate expression of the terroir to the creation of the bottles, their work is carried out with respect for the product. In the cellar they prefer to use wooden vats, and adopt a non-interventionist approach to winemaking, which aims to reveal the true character of their wines without any distortion.
