Red Cox Knock - Lé Thio Noots
The Red Cox Knock by Lé Thio Noots is a wonderfully fresh wine with notes of small red fruits. From 70 year old Cabernet Franc vines planted on sands and shales. The grapes were harvested by hand and fermented in whole bunches with 8 months of maceration. After slow and soft pressing, the wine was aged for a further 9 months in old barrels. You can enjoy it immediately or you can decide to keep it for a few years.
Service
It is recommended to taste it at a temperature of 16/18° in tulip goblets. Wine to drink immediately but left a few years in the cellar can give great emotions.

Excellent red wine to combine with first courses, main courses of meat, to try with a stewed duck..
Cellar: Lé Thio Noots
Lé Thio Noots is located in Chemillé-en-Anjou, a small municipality that is part of the Anjou denomination in the heart of the Loire. It was founded in 2018 by Romain Verger and his wife Lucie. Romain has worked alongside some of the region's most iconic winemakers, including Jérôme Saurigny, Patrick Desplats and Didier Chaffardon, to name just a few, while his wife, once a psychologist, now practices hippotherapy and assists with working horses in their fields. They currently cultivate 3 hectares of vineyard, and among the rows we can find plants of Chenin Blanc, Cabernet Franc, Grolleau and Sauvignon Blanc, as well as some rare grapes such as Gamay de Chaudenay. The couple works the vines sensitively, preferring herbal teas to traditional treatments, and Romain has sown various plants and vegetables such as mustard, potatoes and daikon between the rows to protect and improve the health of the soil. In the cellar the grapes are processed manually in the most natural way possible; long macerations, no additives, no temperature control, fermentation with indigenous yeasts and manual bottling by gravity. Romain's wines perfectly reflect him and his affinity with nature.
