Service

It is recommended to taste it at a temperature of 8/10 ° in tulip goblets. Wine to drink immediately but left a few years in the cellar can give great emotions.

Pairing

Great with fish starters, light first courses, to try with an octopus on potato cream.

Cellar: Jean Pierre Robinot

Jean Pierre Robinot is an alternative character, passionate about wine since he was twenty years old. He took his first steps into the world of wine with the opening in the 1980s of "L 'Ange Vin", one of the first natural wine bars in Paris. A new philosophy arrives in Paris. Years later he devoted himself body and soul to the creation of the magazine "Le Rouge et Blanc", which in a few years became the bible for the vignerons of natural wine. In 2001 the time came when Jean decided that for goats really natural wine would have to start producing it in person. He sells the wine shop and returns to Chahaignes, the birthplace of the Loire, where he buys a few hectares of vineyards. His first wine he calls "Cuvee TGV", in memory of the high-speed train he used to take from Paris to the Loire, until the time came when he decided to move permanently to Chahaignes, to focus on the activity of winemaker. Today it has 10 hectares, divided into different areas, which are located halfway between Tours and Le Mans, near the river Sarthe, a tributary of the Loire. Pineau d’Aunis, Chenin Blanc and Gamay are the protagonists of the “Domaine de L’Ange Vin”, wines from grapes grown in their own vineyards. "L’Opera des Vins" means wines made from grapes purchased from neighboring, personally and carefully selected vignerons. Robinot wines ferment for a long time, from 2 to 4 years, exclusively with indigenous yeasts and the refinements take place in old used barrels, lying in the humid cellars of the property. Its products are free of sulphites (VINS S.A.I.N.S "sans aucun intrant ni sulfites ajoutes"). In addition to all this, to make Robinot's wines unique are the labels that are changed every year, the result of his paintings or his photographs. An indisputable artistic vein.ms to feel the marvelous flavor of the sea
