Sieman's "Chameleon" is a sparkling wine refermented in the bottle obtained from Garganega, Durela and Bronneri. It is called "Chameleon" because it changes skin every year, in fact it can be made with different grapes, the grapes grow at an altitude between 50-100 meters at the foot of the first Alps on limestone and clayey soils with the presence of fossils marine, After the grapes have been harvested, the Tai Rosso grapes are pressed directly in the cellar, to prevent them from releasing color, while those of Garganega and Incrocio Manzoni briefly macerate on the skins and spontaneously ferment in steel with indigenous yeasts. After a short stop in cement, the bottle is fermented again with the addition of frozen must from the same vintage. The wine is not filtered, clarified or even opened, thus presenting a deposit on the bottom. The "Chameleon" has an intense and turbid straw yellow color with a lively foam. Service

The Sieman farm is located in Villaga, in the province of Vicenza, in the middle of the Berici Hills. The name "Sieman" was not chosen by chance, but in Venetian dialect means six hands, precisely because it is run by three brothers who are named Marco, Daniele and Andrea. A health professional, an engineer and an accountant passionate about wine and beer, who one day decide to totally change their lives by dedicating themselves to agriculture and wine production. They buy a small hilly plot on the Berici Hills and begin to cultivate native vines such as the red and white Tai, the Garganega, and the Incrocio Manzoni. The vineyards are bred with natural methods listening to and respecting the rhythms of nature, reducing interventions to a minimum, and excluding pesticides and herbicides, in order to have healthy and tasteful grapes. In the cellar there are no manipulations of any kind in any phase of vinification, and fermentation occurs spontaneously with yeasts present on the grapes. The wines refine in wooden, cement and steel barrels to maximize the properties of the grapes from which they derive. Sieman wines express the characters of the territory in the glass.
