It is recommended to serve it at a temperature of 16/18° in tulip glass. Wine to drink immediately but if left a few years in the cellar can give great emotions.
Pairings
Wine that goes perfectly with soups and minestrone, with dishes of structure, it goes well with aged cheeses, or slightly blue cheeses like Castelmagno DOP.
Winery: Nerina Cardile
Nerina Cardile grew up in Solicchiata, a picturesque hamlet of Castiglione di Sicilia located at over 700 meters above sea level at the foot of Mount Etna, known worldwide for its wine production. From a young age, Nerina maintained a strong connection to this winemaking tradition, nurturing a desire to actively participate in it. A graduate in Psychotherapy from the University of Padua, she worked as a psychologist for several years, but in 2018 she decided to listen to the call of her homeland, which she affectionately calls "my Etna," and return home. In 2019, Nerina began collaborating with the Vino di Anna winery, alongside Anna Martens and Eric Narioo.It was at this winery that she took her first steps in winemaking, producing for the first time a small batch of estate-grown grapes, sourced from her parents' land, whom she considers her mentors in life and in the vineyard. The family vineyards are located on the northern slope of Etna, and Nerina cultivates them with great respect and love for the land, adopting a sustainable approach that is attentive to the climate changes that also affect this area. Nerina's winemaking project is currently under development and focuses on two main wines: a white made from native grapes and a red made from Nerello Mascalese and Cappuccio. Production is limited, favoring elegant and drinkable wines, obtained through spontaneous fermentation, without filtration or fining, to maximize the authentic expression of the terroir and the grapes.
