Subsidium - Cherubini
Subsidium by Cherubini is a sparkling wine with principles of oxidative notes where the minerality perfectly accompanies the structure and strength. Obtained in equal parts from Chardonnay and Pinot Noir, it ages at least 60 months on the lees before disgorging.

Sui Generis - Cherubini
Sui Generis by Cherubini is a sparkling wine from 100% white grapes. Manual grape harvest and in the cellar soft pressing and spontaneous vinification in a concrete tank for about twenty days. At the end of the fermentation, it is always transferred to a concrete tank where it rests until the second fermentation. The bases do not undergo clarification or stabilization treatments. After a refinement of at least 36 months, the disgorgement is carried out and the same wine is used for topping up. Sui Generis is pale gold in color. On the nose excellent hints of flowers and exotic fruits, while on the palate it is very decisive and elegant.
Service
We recommend tasting it at a temperature of 6/8 ° in a flute with an enlarged belly. Excellent to drink immediately, but it will express its best in a few years. We recommend keeping it in a horizontal position in a cool, damp and dark cellar.
Pairing
Excellent as an aperitif, with appetizers, fish main courses and delicate meats. Try it with a baked turbot.
Cellar: Cherubini
The Cherubini farm is located beyond the borders of eastern Franciacorta surrounded by a natural park in the Brescia hills a few km from the city center. In this valley there is a terroir of millennial formation with underground aquifers and rocks rich in limestone with clay substrate. These soil characteristics combined with a light constant breeze and temperature changes give the wines minerality and acidity typical of the production terroir. Conventional agriculture tools such as herbicides or pesticide products are not used. The agricultural and winemaking philosophy is apt to intervene as little as possible both in the vineyard and in the cellar, hence the choice to produce classic methods at Zero Dosage with only refinements in cement tanks that guarantee products with the maximum expression of the territory of origin .
