Cirsium is obtained from Cesane d'Affile grapes, which come from a vineyard of about 1 hectare, planted in 1953 and cultivated with saplings. Harvest is manual and bunches are carefully selected. The fermentation is made of steel with maceration lasting about 15 days. Aging in French oak barrels, where it rests on its fine deposits for about 18 months. Service

The Company of Damiano Ciolli is located in Olevano Romano, a splendid medieval village in the province of Rome. Vine growers for four generations, only in 2001 Damiano together with Father Costantino, believing strongly in the potential of Affile's Cesanese wine, decided to start bottling their production. Cultivated vineyards extend over an area of 6 hectares at an altitude of 450 m. On lands with southern exposure and characterized by a dark red color of volcanic origin. In these lands, the Cesane d'Affile finds the best conditions for growing and giving wonderful wines. The care of the vineyards by Damiano is scrupulous, and the same meticulousness takes place in the cellar, with minimal intervention and without the use of sulfur dioxide. Two wines produced; The "Silene" that is refined in steel and the "Cirsium", whose grapes come from a centuries-old vine and affixed to barriques. Damiano tries to produce wines that can express unique characteristics that derive from the sum between soil, microclimate and vine, and which are the mirror of the territory of origin.
