Damiano Ciolli's Silene, named after a very common flower from the countryside of Olevano Romano, is obtained from a careful selection of Cesanese from 4 different vineyards, planted at different times. Refine in concrete tanks for about a year. A perfectly successful wine with a brilliant ruby red color with characteristic aromas of black cherries and violets. On the palate it is fresh, agile with a remarkable persistence in spite of the slender structure.

Silene Cesanese Superiore di Olevano Romano DOCG - Damiano Ciolli
The name "Silene" comes from a very common flower in the Lazio countryside, Silene Vulgaris with its characteristic balloon shape. Silene is obtained from a selection of Cesana d'Affile grapes coming from vineyards planted in 1981 and 2002. Fermentation is spontaneous in steel tanks. Aging for 12 months in the same tanks followed by a year of refining in the bottle. Silene has a brilliant ruby red color with scents of bitterness and purple. The palate is fresh, agile with a remarkable persistence in spite of the slender structure.
Service
It is advisable to taste it at a 16/18 ° temperature in tulip goblets. Wine to drink at once but that will give you the best of that in 2/3 years.

Cesane Oleane Romano "Silene" is perfect with first courses, grilled meats, to propose on pappardelle to the boar sauce.

The Company of Damiano Ciolli is located in Olevano Romano, a splendid medieval village in the province of Rome. Vine growers for four generations, only in 2001 Damiano together with Father Costantino, believing strongly in the potential of Affile's Cesanese wine, decided to start bottling their production. Cultivated vineyards extend over an area of 6 hectares at an altitude of 450 m. On lands with southern exposure and characterized by a dark red color of volcanic origin. In these lands, the Cesane d'Affile finds the best conditions for growing and giving wonderful wines. The care of the vineyards by Damiano is scrupulous, and the same meticulousness takes place in the cellar, with minimal intervention and without the use of sulfur dioxide. Two wines produced; The "Silene" that is refined in steel and the "Cirsium", whose grapes come from a centuries-old vine and affixed to barriques. Damiano tries to produce wines that can express unique characteristics that derive from the sum between soil, microclimate and vine, and which are the mirror of the territory of origin.
