The cellar: Domaine No Control
No Control is a young and brilliant project located in the north of the Puy de Dôme, more precisely in Volvic. It is led by Vincent Marie who, starting as a simple degenerator, became an organizer of natural wine fairs, and finally took a degree in oenology. He leaves "his" Normandy to start working with Patrick Meyer and Bruno Schueller, in Alsace. This experience will allow him to understand the fundamental principles of biodynamics and to acquire winemaking practices. In 2013 he rented 5 hectares of vines located on terroirs born from recent but also past volcanic activities, which are grown according to Demeter specifications and, it is not uncommon to see it among the rows helped by a horse. In the vineyards it is possible find different vines: Gamay, Pinot noir, Syrah, Chardonnay, Sauvignon, Silvaner and Pinot Auxerrois which all together supply 5 to 7 cuvées depending on the vintage. The grapes are harvested by hand. During the winemaking process no chemicals are added and the wines are produced in the most natural way possible. The white grapes are carefully and slowly pressed. The red grapes are placed in whole bunches for maceration, which will be more or less long depending on the desired product. The wines ferment with indigenous yeasts and are matured sur lie in various containers. all these processes allow the wines to best express the terroir from which they come.
