Their Syrah spontaneously vinifies with a six-month maceration on the skins and another six months of maturation in amphorae. Unfiltered and without added sulphites. Around 4,000 bottles per year.

Excellent in combination with cured meats and cheeses, it goes well with baked pork knuckle and first courses with meat sauce.
Winery: Domaine des Miquettes
The Domaine des Miquettes is located in Cheminas, a small village located on the plateau above Tournon and Secheras, two cities located in the southern part of the denomination of Saint Joseph. The Domaine was founded in 2003 by Paul Estève and Chrystelle Vareille when they took over the farm from Paul's family. In total it expands over five hectares of vineyards divided into one hectare of Syrah and one of Viognier which are classified as Vin de Pays des Coteaux de L'Ardèche, and three hectares in Saint Joseph with 2.6 planted in Syrah and 4h in Marsanne . The Saint Joseph vineyard is located on the hills above Secheras at an altitude of about 350 meters, on soils of granite origin. All the vineyards are certified organic and in the most difficult positions they are worked with a horse-drawn plow. The harvest is done by hand, and in the cellar the fermentations are spontaneous with indigenous yeasts and the refinements take place in large wooden barrels. The range of wines produced includes; refermented Syrah based, macerated white wines, and both red and white wines aged in amphora.
