Franco Terpin's Quinto Quarto Ribolla is a wine made from 100% Rebula grapes. After manual harvesting, the bunches ferment spontaneously in steel thanks to the use of indigenous yeasts, macerating in contact with the skins for three days; then we move on to the refinement phase, always done in steel for 8 months. In the Romagna dialect, *Pirona* means "spinning top"—a reference to the shape of Georgian *qvevri*, the terracotta vessels in which this wine ferments on the skins for 31 days.
