In the Romagna dialect, *Pirona* means "spinning top"—a reference to the shape of Georgian *qvevri*, the terracotta vessels in which this wine ferments on the skins for 31 days. During maceration, the cap remains intact and unbroken, allowing the wine to follow its own natural course. After racking, the wine ages in stainless steel tanks until late spring. In the glass, it displays a golden yellow hue with amber highlights. The nose offers notes of dried apricot, honey, aromatic herbs, and orange zest. On the palate, it is full-bodied, textured, and balanced, featuring pleasant acidity, delicate tannins, and a long, savory finish.

Pirona - Azienda Agricola Baccagnano
In the Romagna dialect, *Pirona* means "spinning top." The name stems from the resemblance between Georgian *qvevri*—the terracotta vessels used for wine fermentation—and the traditional wooden toy: both require support to remain balanced. Pirona is crafted from Albana grapes harvested between late August and early September. The clusters are placed into *qvevri*, where they ferment for 31 days. Intervention is kept to a minimum during this period: the cap of skins is simply maintained intact—never broken—while the fermentation process is patiently nurtured, with the winemaker even listening to its "breathing" through the terracotta. Once maceration is complete, the wine is drawn off without pressing the skins and transferred to steel tanks to age until late spring, prior to bottling. In the glass, it displays a golden-yellow hue with amber highlights. The nose reveals aromas of dried apricot, honey, aromatic herbs, and orange zest. On the palate, it is full-bodied, textural, and rich, supported by vibrant acidity that lends balance and verve. The extended maceration imparts depth, a fine tannic structure, and a long, savory, persistent finish—authentically expressing the character of the Albana grape and its deep connection to the land of Romagna.

It is advisable to serve it at a temperature of 8/10° in tulip goblets. Wine to drink immediately.

It pairs well with substantial fish dishes, herb-seasoned white meats, and aged cheeses. It is a contemplative wine, yet it also thrives in a lively dining setting.

We are in Diolo, between the Piacenza hills and here the Saccomani family cultivates their vineyards for a total of 12 hectares, in this place of great geological value, characterized by a sandy soil and rich in fossils dating back to the Mediterranean Pliocene period, as their label testifies. The Saccomani company is composed of his father Giuseppe and his two sons Luca and Claudia who together with their respective families produce wines in total respect for the land, organically; The altitudes vary from 250 meters to 300 meters above sea level. and their sparkling wines are naturally fermented in the bottle. Theirs is an authentic family made of healthy principles like their wines, direct and honest. In the cellar, the future prospect is totally oriented towards natural production, Luca and Claudia have directly managed the production for a few years, since this year they have also been part of the Vinnatur group.
