Xiropotamos - Domaine Tatsis 

An unconventional white wine, born from a grape variety traditionally associated with the great reds of Greek Macedonia. Tatsis Xiropotamos is crafted exclusively from Xinomavro grapes grown in clay-sandy soils at an altitude of approximately 300 meters. The winemaking process employs a gentle approach that respects the raw material: the grapes are pressed directly and vinified as a white wine, without skin contact. Alcoholic fermentation occurs spontaneously in stainless steel tanks, while a long maturation period of 12 months on fine lees imparts depth, balance, and a remarkably complex flavor profile. It is a distinctive wine with a strong sense of identity, showcasing Xinomavro through a surprisingly white, mineral, and saline expression.

Service

The Domaine Tatsis is located in Goumenissa, a town in the Macedonian region, an ideal place for viticulture where the soils are of limestone origin. The Tatsis family arrived here in 1924 after the disintegration of the Ottoman Empire, coming from Bulgaria. Always winegrowers, the care of the vineyards has passed from grandfather to grandchildren Periclis and Stergios, the current owners. Periklis works the land and supervises the vineyards while Stergios is the oenologist Today there are 14 hectares of vines grown with the classic Greek vines: Roditis l 'Alepou, and Malagousia for whites, and Negoska, Xinomavro for reds. The Domaine Tatsis is among the first in Greece to believe in biodynamic agriculture and the Tatsis brothers intervene as little as possible both in the vineyard and in the cellar.
