An original, unconventional white wine made from Sauvignon grapes, utilizing skin maceration to enhance its structure and complexity. After destemming and maceration on sandstone, the wine is fermented and aged in 500-liter terracotta amphorae for approximately eight months. This limited production of just 1,200 bottles offers a completely unique interpretation of the Sauvignon variety. On both the nose and palate, it displays an almost tannic structure—unusual for a white wine—along with spicy aromas and a bold, expressive character. It pairs perfectly with spicy cuisine, aged or melted cheeses, veal breast, and braised pork belly. A wine that deliberately breaks the mold, crafted for those seeking unconventional tasting experiences.

Service

It is advisable to taste it at a temperature of 16/18° in tulip goblets. Wine to drink immediately but you can leave a few years in the cellar.
