Premno White - Domaine Tatsis

A white wine full of personality, born from the union of four grape varieties: Chardonnay, Malagouzia, Roditis Alepou, and Assyrtiko. This blend combines the international character of Chardonnay with the authentic identity of Greek varieties, creating a wine that expresses its terroir with freshness and balance. The vines grow at altitudes between 250 and 350 meters on sloping clay and sandy-loam soils. The grapes—sourced from young vines up to 12 years old—are harvested between August and September. Each variety is vinified separately, undergoing a 24-hour cold pre-fermentation maceration at 8–10°C, followed by slow, temperature-controlled fermentation. The wine ages on its fine lees to enhance complexity and structure; after blending, it rests further in the tank on the fine lees prior to stabilization and bottling.

Service

We recommend tasting it at a temperature of 10/12 ° in tulip glasses. Wine to be drunk immediately to be drunk immediately but will express its best in a few years. We recommend keeping it in a horizontal position in a cool, damp and dark cellar.

Pairing

Its pronounced savoriness pairs naturally with dishes featuring soft textures and delicate sweetness: creamy seafood risottos, pasta dishes with shellfish and crustaceans, oven-baked fish, and Mediterranean cuisine.

Cellar:  Domaine Tatsis

The Domaine Tatsis is located in Goumenissa, a town in the Macedonian region, an ideal place for viticulture where the soils are of limestone origin. The Tatsis family arrived here in 1924 after the disintegration of the Ottoman Empire, coming from Bulgaria. Always winegrowers, the care of the vineyards has passed from grandfather to grandchildren Periclis and Stergios, the current owners. Periklis works the land and supervises the vineyards while Stergios is the oenologist Today there are 14 hectares of vines grown with the classic Greek vines: Roditis l 'Alepou, and Malagousia for whites, and Negoska, Xinomavro for reds. The Domaine Tatsis is among the first in Greece to believe in biodynamic agriculture and the Tatsis brothers intervene as little as possible both in the vineyard and in the cellar.
