Ambratile- Cantina Antonioli
Ambratile by Cantina Antonioli, is a skin-macerated white wine that captures the authentic soul of the hills of Gubbio, in Umbria. Born from the artisanal efforts of Giulia and Giorgio Antonioli, it reflects a viticultural approach deeply attuned to nature and the local landscape, a production method that is essential, respectful, and firmly rooted in tradition. Crafted from Malvasia di Candia, Trebbiano, and other white grape varieties sourced from old vines, some 60 to 90 years of age, grown at an altitude of 550 meters on clay and marl soils, Ambratile stands out for its genuine identity and the distinctive character typical of skin-contact white wines. The winery’s philosophy is built upon organic and biodynamic practices, spontaneous fermentation using indigenous yeasts, and a minimal use of sulfites, all to allow for the most authentic expression of the grapes and their place of origin. It is an "orange wine" with real personality, designed for those who appreciate vibrant, terroir-driven wines free from artifice—a wine that brings character to the table and offers a tasting experience that defies conventional expectations.
Service
It is advised to taste it at a temperature of 10/12° in large balloon glasses and open it a few hours before consuming it. Wine that continues its evolution for years. It is recommended to keep it in a lying position in a dark, damp, cool place.
Pairing
It pairs perfectly with aged pecorino and artisanal cheeses, cured meats, tagliatelle with porcini mushrooms, herb-infused risottos, roasted vegetables, and flavorful fish. Try it with rustic bread and aged pecorino for a simple, authentic pairing.
Cellar: Cantina Antonioli
Established in 2018 in the hills of Gubbio, Cantina Antonioli was born from Giulia and Giorgio’s dream to change their lives and dedicate themselves to the land, the vines, and winemaking. By restoring an old farmhouse and several small vineyard plots, they have breathed new life into the region's winemaking tradition. The winery cultivates 18 small vineyard plots—including ancient vines over 120 years old—that are now central to a project aimed at showcasing indigenous grape varieties. The vineyards are managed according to organic and biodynamic principles, with a strong focus on biodiversity and minimal intervention. In the cellar, grapes are selected by hand, and fermentation occurs spontaneously using indigenous yeasts. No fining, filtration, or stabilization processes are used, ensuring the wines’ natural identity is preserved. Each bottle thus reflects the authentic character of Umbria: wines that are alive, expressive, and deeply connected to the land, showcasing the aromatic richness, fruit qualities, and balance of its grape varieties.
