A white wine of great finesse, sourced from 2.2 hectares of the Clos des Treilles vineyard on the south/southeast-facing slopes of Parassy. Planted in the early 1970s, the vines grow in sedimentary Kimmeridgian clay-limestone soil rich in siliceous limestone, which imparts a distinct mineral character to the wine. The winemaking process involves initial aging in large oak casks (*foudres*) on fine lees for the first year, followed by a period in stainless steel tanks until bottling—which took place in the autumn of 2024—to preserve freshness and balance. On the palate, it stands out for its broad yet taut profile, with vibrant freshness supporting the structure. The finish is long, saline, and slightly bitter—a hallmark of its terroir. It pairs perfectly with prawns and scampi, enhancing their natural sweetness, as well as with white meats in sauce and foie gras. It is excellent with sweet-and-sour dishes and aged goat cheeses, and surprisingly good with sorbets. An elegant, balanced wine that combines breadth, freshness, and refined mineral tension.
Service
It is advisable to taste it at a temperature of 8/10° in tulip goblets. Wine to drink immediately but you can leave a few years in the cellar.
