Menetou-Salon Les Chandelieres Blanc - Domaine Philippe Gilbert
A magnificent Loire white, a refined expression of the Menetou-Salon terroir. The east-facing vines of the *Les Chandelières* vineyard are rooted in Kimmeridgian clay-limestone soils—the famous "white lands"—which lend the wine depth and a mineral character. Vinified and aged for 22 months in stainless steel tanks on the fine lees, it develops great aromatic complexity while retaining tension and freshness. On the palate, it combines the vibrancy of Sauvignon Blanc with the body and elegance derived from its extended aging: a white wine of volume, depth, and extraordinary finesse. Structured and food-friendly, it pairs beautifully with classic French cuisine—such as *bouchées à la reine*, seafood gratin, and *blanquette de veau*—as well as with sautéed vegetables and Asian dishes.
Service
It is advisable to taste it at a temperature of 8/10° in tulip goblets. Wine to drink immediately but you can leave a few years in the cellar.
Pairings

Domaine Philippe Gilbert represents an example of excellence in biodynamic viticulture in the Loire Valley, with a history that extends over two centuries. Founded in 1768, the domain has maintained a viticultural tradition rooted in the territory, with particular attention to the ecosystem and respect for nature. The Menetou-Salon appellation, of which it is part, is known for its quality and for its native vines, Sauvignon Blanc and Pinot Noir, which have adapted perfectly to the clay-limestone soils of the region. The winemaking process makes use of traditional and innovative techniques, using various types of containers such as wooden vats, stainless steel tanks and oak barrels, to enhance the unique characteristics of each wine. The range of wines on offer is very diverse, including whites, rosés, reds, orange wines and refermented wines, each reflecting the distinctive nuances of the local terroir. Pinot Noir stands out for its freshness and dynamism, while Sauvignon Blanc is characterized by a marked minerality. The production philosophy of Domaine Philippe Gilbert is based on sustainability, with particular attention to biodiversity and soil health, fundamental aspects of biodynamic agriculture. The certification obtained in 2007 testifies to the domaine's commitment to responsible agricultural practices, helping to preserve the region's winemaking tradition and guaranteeing high-quality wines, an authentic expression of the Menetou-Salon territory.
