Cellar: Francis Boulard
The cellar of Francis Boulard is located in Cormicy, northwest of Reims on the hills of Saint-Thierry. Francis, who belongs to a family of winemakers for six generations, runs together with her daughter Delphine, the cellar since 2009 when the sons of Raymond Boulard, the previous owner, decided to undertake other professional ways. With the arrival of Francis, a new activity began; First Francis converted all the vineyards to biodynamic canons by eliminating any chemical from the rows and in the cellar applies only spontaneous fermentations with indigenous yeasts and refinements of the base wine in old oak barrels. The Boulard's vineyards, Chardonnay, Pinot Noir and Pinot Meunier, are 3 hectares, and are located in Cormicy, Paradis, Belval in the Marne Valley, Cuchery, Cauroy-les-Hermonville and Mailly- Champagne, a village of the Montagne de Reims classified as Grand Cru. Thanks to the methods used by Francis in a few years his cellar has become one of the most interesting in Champagne and its wines are elegant, powerful and mineral.
