Pure Bianco - Movia
The Pure Bianco is a sparkling wine produced with the ancestral method obtained from Chardonnay and Ribolla yellow grapes. The grapes come from vineyards that grow on Flysch del Collio soils, with layers of marl and sandstone. The harvest is manual and late, and in the cellar the first fermentation is started spontaneously with only indigenous yeasts with a short maceration on the skins of a day, to extract the delicate color. Then proceed with the delicate pressing, and the must that is already in fermentation is put into the barriques. This is how the base wine is born, without any trailing edges or additions of any type of chemical products or preservatives. After 4 years, the refermentation in the bottle is done by adding fresh must to the base wine, neither "liqueur de tirage" nor "liqueur d 'expedition" are added because no degorgement is done. In the bottle, where it remains on its lees for 2 years in the cellar, there are deposits which then allow the wine to improve and continue to evolve. The Pure is presented by the glass with a golden yellow color, On the nose it expresses to the nose fruity scents with an original and unique character. The mouth is fresh, mineral with a long persistence.
Service
We taste Pure Bianco at a temperature around 8/10 ° C. Wine to drink immediately but left a few years in the cellar can give great emotions. The wine must always be scrapped at a temperature around 0 ° C, thus separating the wine from these deposits still containing active yeasts.
Pairings
The Pure of Movia is great as an aperitif, ideal for fish dishes, to try with crustaceans and raw fish tartare.
Cellar: Movia
Movia is situated on the border between Slovenia and Italy, on the splendid slopes of the Slovenian Collio called Brda. The story of the Movia family dates back to the beginning of 1700, but it is only in the nineteenth century that after the marriage between a descendant of the Movia family and Mr Kristancic, wine production began. Immediately, the wines of Movia were distinguished by the strong character, the overwhelming quality and the elegance of the fact that their fame soon crossed the national boundaries. Very active during the Second World War in the liberation of Yugoslavia by Nazi troops, they were rewarded by Marshal Tito, who left him wide freedom of wine production avoiding the nationalization of the vineyards. Today, the company is led by Ales Kristancic, which cultivates 22 hectares of vineyards located among the best plots between the Brda region and the Italian Collio. Ales has maintained the same production philosophy of wines produced according to the oenological tradition, without resorting to chemical means both in the vineyard and in the cellar, without any filtration, without oenological intervention and with the utmost respect for nature. Vineyards are Chardonnay, Ribolla Yellow, Tocai, Pinot Grigio, Sauvignon, Merlot, Cabernet Sauvignon and Pinot Noir for the production of both sparkling wines and still wines. Certainly the most famous wine is Pure White Brda, a sparkling wine produced with Chardonnay and Ribolla Gialla, which is not released so that the consumer can taste and enjoy the moment of degorgement.
