Levis by Cherubini is a sparkling wine rosè from pure red grapes. Refinement of at least 48 months is followed by disgorging and for refilling I use the same wine. It has a soft pink color, an excellent evolutionary and tertiary note on the nose. On the palate, freshness and balance embrace very well with minerality.

Levis - Cherubini

Levis by Cherubini is a sparkling wine rosè from pure red grapes. Manual grape harvest and in the cellar the grapes are de-stemmed and left to macerate for about 6 hours. We proceed with decanting in a cement tank and spontaneous vinification in the tank for about twenty days. At the end of the fermentation it is always transferred to a concrete tank where it rests until the moment of the second fermentation. After an aging of at least 48 months, we proceed with the disgorgement and for topping up I use the same wine. Levis is pale pink in color, with an excellent evolutionary and tertiary note on the nose. On the palate, freshness and balance embrace very well with minerality.

Service

We recommend tasting it at a temperature of 6/8 ° in a flute with an enlarged belly. Excellent to drink immediately, but it will express its best in a few years. We recommend keeping it in a horizontal position in a cool, damp and dark cellar.

Pairing

Excellent as an aperitif, with appetizers, fish main courses and delicate meats. Try it with a baked turbot.

Cellar: Cherubini

The Cherubini farm is located beyond the borders of eastern Franciacorta surrounded by a natural park in the Brescia hills a few km from the city center. In this valley there is a terroir of millennial formation with underground aquifers and rocks rich in limestone with clay substrate. These soil characteristics combined with a light constant breeze and temperature changes give the wines minerality and acidity typical of the production terroir. Conventional agriculture tools such as herbicides or pesticide products are not used. The agricultural and winemaking philosophy is apt to intervene as little as possible both in the vineyard and in the cellar, hence the choice to produce classic methods at Zero Dosage with only refinements in cement tanks that guarantee products with the maximum expression of the territory of origin .
