Producer Cherubini

The Cherubini farm is located beyond the borders of eastern Franciacorta surrounded by a natural park in the Brescia hills a few km from the city center. In this valley there is a terroir of millennial formation with underground aquifers and rocks rich in limestone with clay substrate. These soil characteristics combined with a light constant breeze and temperature changes give the wines minerality and acidity typical of the production terroir. Conventional agriculture tools such as herbicides or pesticide products are not used. The agricultural and winemaking philosophy is apt to intervene as little as possible both in the vineyard and in the cellar, hence the choice to produce classic Dosage Zero methods with only refinements in cement tanks that guarantee products with the maximum expression of the territory of origin .
