No3 - Fulvio Bressan
Bressan's No3 is a red wine with a full, vinous and fruity bouquet, of exceptional elegance, with scents of undergrowth and violets softened by the stay in the large 2000-litre oak barrels that are absolutely not toasted, which enrich it with aromas of aromatic musk. The vinification takes place with fermentation on the skins for about 30 days, during which various punching downs, pumping overs and 1 or 2 delestages per day are carried out; once this phase is over, the fermented must is separated from the skins, which are gently squeezed only to facilitate complete draining and nothing else. The wine is then placed in different 2000-litre barrels. In these barrels the wine can begin its life, deciding autonomously and completely naturally when to carry out the malolactic fermentation. In the following 3/4 years the wine continues its refinement on the yeasts with periodic batonnage.
Service
It is advisable to serve it at a temperature of 16/18° in balloon cups. Wine that will express its best features in a few years.
Pairing
Great with baked pastries and second courses of meat, seasoned cheese, to try with wet duck.
Cellar: Fulvio Bressan
The cellar of Fulvio Bressan is located in Farra d'Isonzo, in the province of Gorizia. Historical Bressan, whose origins date back to 1726 by Giacomo Bressan. From generations to generation Nereo has arrived, but especially Fulvio, who after completing the university studies, he and his wife Jelena Misina are dedicated to managing the company and the international promulgation of the company, so that Fulvio is appointed "Noble of Friulian Wines" by Duke Emilio I. Fulvio cultivates 20 hectares of vineyards that lie on the pebbles of the sunshine that have the peculiarity of accumulating daytime heat and releasing it in the evening. The ideas of Fulvio Bressan to make the wines are very clear, no chemical scavenging in the vineyard but only the respect of nature, in the cellar only indigenous yeasts and traditional vinification, in accordance with a long tradition that refuses modernity. The cultivated vineyards range from native Schioppettino, Malvasia, Verduzzo Friulano and Ribolla Giallo to Pinot Noir and Merlot. Bressan wines are real, sincere, unique, intense as the strong and charismatic personality of those who produce them.
