Briscola is a sparkling wine made from aromatic Malvasia di Candia grapes. Frank and fresh, it plays on the balance between aroma and bubbles, between matter and agility. A naked, sincere and free from prejudice wine. The harvest is manual and takes place in the first ten days of September. The grapes are softly pressed and the must is fermented at low temperatures to obtain more elegant aromas. Spontaneous fermentation with only indigenous yeasts lasts about two weeks. It is then kept in cement tanks until the second fermentation. Second fermentation in the bottle, without racking. With a second fermentation duration of about 60 days. Aging In the bottle for a few months before the product is put on the market.
Service
It is advisable to serve it at a temperature of 8/10 ° in tulip goblets. Daily wine.
Pairings
Great as an aperitif, it accompanies fish appetizers, first vegetable dishes, to try with an octopus ceviche.
