Don Pippinu 2019 - Vini Scirto
Don Pippinu by Vini Scirto is a red wine obtained from grapes from a centuries-old vineyard, partly ungrafted, located on Etna. After the harvest which takes place around the first half of October, the grapes are fermented spontaneously in steel for around 10/20 days. Refine in tonneaux for at least 18 months. The nose teases with red and fleshy fruit, recalling black cherries and berries. Initially it is rebellious and energetic, stirring herbaceous and spicy sensations inside, but then it stabilizes, becoming almost balsamic, fresh and with a suitable minerality. The tannic texture that pervades it makes it elegant and intriguing.

Service
We recommend serving it at a temperature of 16/18 ° in tulip glasses. Wonderful evolution in the bottle with an ideal consumption in a few years if well preserved in a cool, damp and dark cellar in a horizontal position.
Pairing
It should be paired with roasted red meats, game, aged cheeses, spicy foods, very tasty dishes in general.
The cellar: Vini Scirto
Vini Scirto is a small and young Sicilian company located in Passopisciaro, a hamlet of Castiglione di Sicilia, a municipality in the province of Catania on the northern slopes of Etna. To manage the winery we find Giuseppe and Valeria, who before embarking on this adventure were doing something else: Giuseppe is an IT expert, she is a graduate student in foreign languages. The company belonged to Giuseppe's grandparents who always produced wine and oil, which were sold in bulk. When Giuseppe's grandfather died, it was the time when everyone on the Etna sold the vineyards. Giuseppe and Valeria, on the other hand, against the tide, have decided not to sell and start working the vines, driven also and above all by the fact that for Giuseppe they have a great emotional value, given that since he was a child he spent all summers with his grandfather helping him in his work. So in 2009 they started working in the vineyard, following the teachings of their grandfather, and 2010 was the first vintage produced. The vineyards, planted at the beginning of the 1900s with a straight foot, are partly bred as saplings and partly as espaliers and are located precisely in the Feudo di Mezzo and Contrada Porcaria district. We find mainly the nerello mascalese, flanked by other cultivars such as nerello cappuccio, carricante, grecanico and minnella. They produce 3 labels: a white wine, blend of all the white grapes called Don Pippinu, in memory of their grandfather; two Etna Rosso, coming from two different districts, called Don Pippinu and A ’Culonna. Giuseppe and Valeria like to remember that they have completely banned chemistry both from the land and from the cellar, and the only one we use is that of love !
