Service
We taste it at a temperature around 16/18 ° C in tulip glasses. Wine to be drunk immediately but left to rest in the cellar for a few years can give great sensations.
Pairings
Wine for all meals, excellent to accompany main courses of meat, to try with a roast duck breast.
Winery: Ugo Lestelle
Ugo Lestelle is a young producer from Languedoc who already has a solid reputation in the world of international wine. After wandering in different areas of southern France, he decides to settle permanently in Saint-Chinian, restoring an old sheepfold at 550 meters above sea level: he was convinced by the clayey-limestone soils of this area with a very large percentage of silicon. So in 2015 he began his adventure with only two hectares of property: today there are 7 hectares, but the style and philosophy with which he works his wines, which must be at all natural costs, have remained unchanged. It works with native vines of the area such as grenache, carignan, aramon, syrah and terret, making them with carbonic maceration in whole bunches and aging in small barrels. The choice of wood changes with each of his wines. A very young person to keep an eye on.
