Ormiale is a red wine of extraordinary finesse and elegance obtained from Merlot grapes that come from 3 different plots where the vines are aged between 15 and 70 years. Manual harvest and, in the cellar, the grapes are destemmed entirely by hand. Fermentation with indigenous yeasts in oak vats. Aged in 225L, 500L and 600L barrels. for 24 months. No clarification or filtration before being bottled.
Service
It is advisable to taste it at a temperature of 18/20 ° in grand ballon goblets. Wine to drink immediately but can have a wonderful evolution in the bottle.
Pairing
Very good with second courses of meat, braised, stewed, it is advisable to try it with a plate of seasoned cheeses.
Cellar: Ormiale
Ormiale was founded in 2007 by Fabrice Domercq and Jasper Morrison. It is located in the north of the Entre-Deux-Mers region, about 15 kilometers south of St. Emilion and 8 km from Castillon la Bataille. The vineyards, Demeter certified, stretch over 2 hectares on the Côtes de Castillon and Côtes de Francs, and are grown with the classic Bordeaux vines, such as Merlot, Cabernet Sauvignon, Cabernet Franc and Petit Verdot. Ormiale works with very low yields, around 20-25 hectoliters / hectare considering that the maximum authorized yield for the Bordeaux Supérieur denomination is 59 hectoliters / hectare.The harvest is manual and all the bunches are de-stemmed by hand, therefore in the cellar fermentation begins only with indigenous yeasts. The aging of the wines is carried out in 225 liter, 500 and 600 liter oak barrels and in stainless steel tanks for a period of approximately 18 months. All wines are not filtered and a little sulfur is added only if necessary. All this work generates wines of extraordinary finesse.
