Bourgogne Rouge - Sylvain Pataille
The Bourgogne Rouge by Sylvain Pataille is a fresh and fruity wine that comes from pure Pinot Noir grapes. Sylvain Pataille currently cultivates 12.5 hectares of vineyards planted with Pinot Noir, Chardonnay, Pinot Blanc and Pinot Gris in the Côte de Nuits, and immediately wanted to use natural methods for working the land and the vineyard, up to a biodynamic style cultivation throughout the Domaine. The grapes for producing Bourgogne Rouge come from a small plot that was planted in 1956 on clay-limestone soils. In the cellar the vinification is carried out by keeping the whole 15% as per use in Burgundy. Its aging continues for 10-12 months in barrique. The Bourgogne Rouge is an energetic wine that tastes of red cherries, with a delicate and soft structure that captures a vibrant and fresh expression bottlels.

The Domaine Sylvain Pataille is located in Marsannay in the heart of Burgundy. It was born in 1999 when Sylvain, after gaining experience in various wineries in the area, decided to untie himself from the preconceptions of standardized wine by using chemical products during cultivation and vinification, to produce biodynamic wines, in which the standardization of wines is completely removed in favor of a product able to best express the power of the terroir that produces it through cultivation techniques of biodynamic, natural and biological grapes. Today Sylvain cultivates 12.5 hectares of vineyards planted with Chardonnay, Pinot Noir, Pinot Blanc and Pinot Gris for a total of about 55,000 bottles a year. Demanding, he works his vines on horseback, intervenes as little as possible, and only only small amounts of sulfur.
