IL NATALE QUANDO ARRIVA, ARRIVA

With this winebox we have selected six different artisan producers, specialized in this style characterized by natural refermentation in the bottle. But what is it, and how is this type of wine produced? The refermentation in the bottle is a traditional and artisanal method that the farmers used for the production of their wine. In the past, the harvests took place in October, and with the arrival of the first cold winters, the alcoholic fermentation stopped leaving sugary residues. With the arrival of the first warm springs, fermentation resumed and the sugars were transformed into alcohol and carbon dioxide which remained inside the bottle, creating the sparkling wine, and since the yeasts had not disgorged, they also remained inside, thus creating the “sur lie”. The same procedure is used by modern winemakers who sometimes add sweet must instead of residual sugar. This technique is also called the ancestral method, referring to the French mèthode ancestral. The wines produced in this way have a more veiled appearance, with a fine bubble, and a more complex taste, but what is certainly surprising is that the bottle disappears in a flash.

Marcello ColFondo Vino Rosato Frizzante 2020 – Voltumna

Marcello ColFondo is a sparkling wine produced from Sangiovese and Pinot nero grapes. The grapes are harvested slightly earlier than the normal ripening period usually at the end of September. After pressing, fermentation is allowed to continue with the use of only indigenous yeasts in a steel tank. With the must still in fermentation, it is bottled to give way to the refermentation. This method, called ancestral, allows to have fragrant aromas and a marked acidity. Marcello ColFondo presents a pinkish color. On the nose aromas of red berry fruit with earthy and bloody notes. At the sip it is agile, with a marked agility, sapid, in short, a particular and extremely enjoyable glass.

Rosato frizzante "No Autoclave" Bergianti - Terrevive

Bergianti's "No Autoclave" is a wine that screams at the top of its lungs the tradition of refermented in Emilia, which is not an autoclave. It comes from red grapes but inside there are also white ones. After the manual harvest of the grapes, fermentation occurs spontaneously in concrete tanks, with a second refermentation in the bottle. No clarification or filtration and negligible addition of sulfur before bottling. Refine for two years on the lees. A fresh and taut wine, pleasant and refreshing, with hints of wild strawberries and bread crust.

Vino Frizzante El Bauletto - Montenigo

El Bauletto di Montenigo is a refreshing, fleshy and agile sparkling wine made from 100% Corvina grapes. The grapes, grown organically, are harvested by hand and pressed whole in a small press, thus obtaining an amber-colored must which is left to ferment in a concrete tank. The second fermentation takes place thanks to the addition of dried Corvina must. It is not filtered and is sulphite-free. A wine with a straw yellow color with amber reflections, fine and persistent perlage. The nose is intense, the notes of pear and white flowers blend with the hints of bread crust just hinted at. In the mouth it is decisive, savory and lively with a slightly bitter and dry aftertaste.

Foddreè - Fabio Ferracane

The Foddreè by Fabio Ferracane is a sparkling wine that comes from local white grapes obtained through the refermentation in the bottle. The grapes come from vineyards located on soils tending to calcareous at 160m.s.l.m. Harvesting is done manually in the third decade of September. Grape destemming and fermentation with indigenous yeasts only in steel tanks. Before the fermentation ends it is bottled. The Foddreè has a straw yellow color. On the nose hints of yeast, pear and almond in the finish. Very fresh, sapid and quite long on the palate.

"Macerato" Sparkling Wine - Cantina Furlani

The "Macerato" sparkling wine from Cantina Furlani is produced using white grapes. The vinification is carried out spontaneously without added yeasts and without temperature control, with a short maceration. For decanting the lunar cycles are followed. The refermentation in the bottle takes place with indigenous yeasts and the wine is clarified with the only use of winter cold. It is not filtered. Zero sulfur dioxide added. "Macerato" sparkling wine has a beautiful pink color. Fruity aromas with spicy notes on the nose. In the mouth, its freshness and great drinkability stand out.

Spumante Rosato Emilia IGP Cichin - Podere il Saliceto

Cichin is made from grapes of Lambrusco di Benetti, an ancient variety of Lambrusco originating from Campogalliano, produced with the bottle refermentation method. After a night on the skins the fermentation follows and then the refermentation in the bottle without disgorgement. This method, called ancestral, allows to have fragrant aromas and a marked acidity. The Cichin is an intense pink color with a fine and persistent perlage. The nose is characterized by a persuasive olfactory profile, with notes of red fruits and floral touches. In the mouth it is fresh and vibrant, mineral, with a finish of good persistence.
