Menetou-Salon Blanc - Domaine Philippe Gilbert
An elegant expression of Sauvignon Blanc from the Menetou-Salon appellation, this wine originates from vines approximately 25 years old, grown on a prized Kimmeridgian clay-limestone terroir. The roughly 10 hectares of vineyards are divided into six parcels, each contributing unique nuances and complexity to the wine. The winemaking process involves extended aging on fine lees in stainless steel tanks for a period of 10 to 18 months. This approach preserves the grape variety's aromatic purity while imparting greater structure, depth, and balance to the wine. In the glass, it displays an intense, refined aromatic profile where notes of citrus, white flowers, and minerals blend harmoniously. On the palate, it is fresh, dynamic, and savory, featuring a pleasant tension that leads into a long, persistent finish.
Service
It is advisable to taste it at a temperature of 16/18° in tulip goblets. Wine to drink immediately but you can leave a few years in the cellar.
Pairings
Its lively freshness and pronounced minerality make it the ideal companion for asparagus, crustaceans, shellfish, and raw or grilled fish.
