Unicoettaro - Torre67
A single hectare, an old vineyard, and a story meant to be savored. Unicoettaro is the first Negroamaro IGP Salento red wine produced by StudioTorre67—the venture of Matilde Castellini and Alessandro. It originates from a single hectare of old, abandoned vineyard nestled in the countryside of Alezio, near an ancient rural tower—an authentic, evocative setting that embodies the true identity of the Salento region. Made from 100% Negroamaro grapes, Unicoettaro offers a surprisingly light, contemporary interpretation of this variety. With an alcohol content of 11% ABV, it stands out for its freshness, agility, and exceptional drinkability, delivering a natural, juicy, and vibrant tasting experience. It is a red wine that breaks away from the stereotypes of heavily structured Southern wines; pleasant, dynamic, and sociable, it is designed to be enjoyed effortlessly and shared without formality. Unicoettaro tells the story of a small vineyard and a profound bond with the land: an authentic, fresh, and unconventional Negroamaro that brings the character of Salento to the glass with a light touch.

The cellar: Torre67
Torre 67 was born in the heart of Salento, n Alezio, centered around an ancient 16th-century tower and a small Negroamaro vineyard overlooking the countryside, just a few kilometers from the Ionian Sea. The project stems from Matilde and Alessandro’s desire, following their time in Milan with MYJUICE, to return to the land and care for a place meant to be preserved rather than merely owned. It comprises one hectare of old vines, cultivated using dry-farming methods and with full respect for the soil’s natural balance, avoiding any forced interventions in either the vineyard or the cellar. Organic fertilization, cover crops, and microorganisms support a slow, meticulous process, while the grapes are hand-harvested and transformed into just 1,500 bottles a year. An authentic, artisanal Negroamaro deeply rooted in its territory: a wine that tells the story of the land, of time, and of the choice to care for it.
