Rosso Dei Platani - Giuseppe Cipolla
Giuseppe Cipolla’s *Rosso dei Platani* brings the most authentic essence of central Sicily to the glass. Born from the producer's artisanal vision, this wine stands out for the unique balance of its red and white grape blend, uniting structure, vibrant freshness, and remarkable aromatic tension. The vines draw nutrients from complex soils—a mix of clay, limestone, and gypsum—creating a mineral foundation that lends the wine depth, pronounced savoriness, and an unmistakable sense of place. Crafted with a low-intervention approach aimed at preserving fruit integrity, the production process involves destemmed grapes and spontaneous fermentation in stainless steel tanks, driven exclusively by indigenous yeasts. A brief skin-contact period—limited to one or two days—ensures delicate, controlled extraction, maintaining the wine's immediacy, brilliant color, and easy drinkability. Aging is skillfully split between wooden barrels and steel tanks, a choice that perfectly balances aromatic precision with pleasant structural evolution. The result is a food-friendly, expressive, and well-defined wine with a dynamic, smooth profile; best served between 14 and 16°C, it pairs beautifully with flavorful pasta dishes, white meats, cheeses, and traditional Sicilian cuisine.
Service
Let's taste it at a temperature around 16/18° C. Wine to drink immediately but leave to rest in the cellar for a few years can give great satisfaction.
Pairings
Ideal wine to be consumed with baked or grilled meat, to be tried with rolls of stuffed ham and cheese.
