The Pampaneo Ecologico Airèn by Esencia Rural is a macerated white wine that comes from Airen grapes that come from centenary sapling-trained vines rooted on sandy soils. The vinification involves spontaneous fermentation, without the addition of yeasts, in steel tanks, with maceration on the skins for about 2 months. The wine thus obtained is bottled young, with minimal addition of sulphites. The result is a real hymn to the natural spontaneity of the territory which is expressed in an energetic, fresh, mineral and juicy way. Very long persistence that proposes Mediterranean spices and herbs even after the sip.

Service

We taste the Airen Natural Pampaneo at a temperature of 12/14 ° in tulip glasses. Wine to drink immediately but will express its best in a few years.

Winery: Bodega Bruno Ruiz

The Bodega Bruno Ruiz is located in Quero, a few kilometers from the city of Toledo, in the Spanish region of La Mancha. The winery is managed by Julian Ruiz Villanueva, a romantic winemaker who, in this dry and sunny region, cultivates 65 hectares of vineyards with native varieties such as Tempranillo, Tinto Velasco and Airén. Julian breeds his vineyards in a biodynamic regime, refusing any invasive treatment and any form of mechanization. In the cellar all the operations are almost carried out outdoors due to the great heat of the region, fermentations are spontaneous with only indigenous yeasts, refinements take place in amphorae, and before bottling there is no clarification, filtration or addition of additives. The wines of Bodega Bruno Ruiz are unique and fascinating and embody the most authentic and traditional spirit of La Mancia.
