Service
We recommend tasting it at a temperature of 8/10° in a balloon flute. Wine to be drunk immediately but will express its best in a few years.
Pairings
Champagne for the whole meal, from an appetizer to a fish main course, to be tried with candies stuffed with tomato branziono.
Cellar: Michel Laval
The history of the Laval family dates back to 1870, when Jules Laval inherits 16 hectares of land, and decides with his son Lucien to plant vineyards there. In 1948, with Roger and Fabienne, the production of Champagne began but, it was only at the end of 1970 that with Michel laval, the Laval brand was created. Today, at the helm of the Domaine, there are Aurore and Florian, Michel's children, who have fully embraced the family history and proudly carry on what their father did. What certainly makes the difference is their sustainable approach; strongly respecting soils and vineyards, the two have in fact renounced herbicides and pesticides, preferring compost and green fertilizers. Logically, the elaboration of the champagnes follows the same desire for expressive purity and integrity in the vinification. No enrichment of the musts, alcoholic fermentations with only indigenous yeasts, no filtration or clarification of the sparkling bases. Then, determined to give voice, with their Champagnes, to the wonderful terroir of Boursault, Aurore and Florian create Cuvées for sharing, designed to be able to enjoy conviviality in a carefree way.
